The Art of Drinking Absinthe

Absinthe has always been a novelty for Americans who associate it with the romantic, bohemian Prague of centuries ago. I’m regularly asked by visiting friends where to try it. Truthfully, if you want to sample quality absinthe, avoid any establishment that offers flaming green shots. For a more stylish—and fireproof—experience, I recommend Hemingway Bar. This polished nook of a cocktail lounge serves St. Antoine, a Czech craft absinthe that gets its licorice kick and emerald hue from carefully selected herbs and proper distillation techniques, not artificial flavors and dyes. Served with a replica Belle-Epoque-era absinthe fountain for diluting (a knowledgeable waiter will walk you through the experience), Hemingway Bar promises the real deal. And if you’re in search of a unique souvenir, bottles of St. Antoine are conveniently available for purchase at the bar (700 CZK). Those not partaking of the “green fairy” can choose from an assortment of premium spirits and beautifully executed mixed drinks, including signature cocktails like their tasty lavender fizz.
