Those of us who have been in Prague long enough remember a time when a gin and tonic used to arrive at your table as a bottle of tonic and a shot of gin. (Before that there were these Czechoslovak era cocktails which you can actually still try, if you dare!)

Prague has emerged from the drinks dark ages and craft cocktails are literally shaking things up in the Czech capital where you can now sip at a secret cocktail lounges, modern speakeasies, or even entire bars devoted to a single drink.

Among the pioneers of the mixology movement is the acclaimed Black Angel's Bar on the lower level of the Hotel U Prince. Don't let its conspicuous location, a stone's throw from the Astronomical Clock, deter you. If you are looking for expertly made cocktails amid 1930s-styled brick-cellar surrounds, this is the place.

I stopped by on a recent Friday evening and the place was buzzing with a mix of locals and foreigners. I tried one the bar's famed molecular drinks, “The Penicillin” (artisanal honey, homemade ginger syrup, lemon juice, and aged Scotch whisky). You don't need a wicked cold to enjoy this drink. It's fabulous.

Purists will relish drinks like the ice-cold Martini Cocktail, based on a 19th-century recipe, with jumbo olives, an Old-Fashioned, Moscow Mule, or for the adventurous, the Mai Tai made with Czech spirit Becherovka, or a Sazerac served over a jumbo absinthe ice ball.

The drinks are a bit spendy and you can easily rack up a tab, but sip slowly and enjoy as you are truly tasting some of the world's best cocktails—though don't take my word for it: Black Angel's Bar was name among the Top 50 bars in the world by the UK Sunday Times in 2012, and more recently made the top 10 bars in the international Spirited Awards.
